White Lady Serving Guide
- Pour half of Dilly Delly's White Lady mix into a cocktail shaker and add one egg white.
- Shake for 5 seconds without ice (dry shake).
- Then add ice and shake until shaker feels cold.
- Double strain into a chilled coupette
- Dry shaking before adding ice ensures the acidity of the lemon pasteurises the eggs white and creates a nicer froth.
- For a vegan option, add 20 ml of aqufaba (the juice strained from a tin of chickpeas) instead of egg white.
