White Lady Serving Guide

HOW TO:

 

  1. Pour half of Dilly Delly's White Lady mix into a cocktail shaker and add one egg white.
  2. Shake for 5 seconds without ice (dry shake).
  3. Then add ice and shake until shaker feels cold.
  4. Double strain into a chilled coupette

     

     

      PRO TIPS:

       

      • Dry shaking before adding ice ensures the acidity of the lemon pasteurises the eggs white and creates a nicer froth.
      • For a vegan option, add 20 ml of aqufaba (the juice strained from a tin of chickpeas) instead of egg white.
